Tips for using honey

A lot of people love to substitute table sugar for honey in different recipes because honey is healthier and also twice sweeter than sugar. For this reason you will have to reduce the amount required for the recipe to one-half or one-third honey for table or granulated sugar.

Also, honey has a water content of about 18% which means you will have to reduce quantity of water required in the recipe for baked foods by about one – fifth.

When baking sweets with honey, it is important that you lower the temperature of your oven by 25 degrees F (15 degrees C). If a recipe requires that you measure honey by weight, remember that 1 cup of honey weighs 12 ounces. 

To help honey easily slide off your cooking utensils if you use them for measurement, spray the utensil or rub some oil on it before using for measurement.

Unless the recipe calls for the use of cream or sour cream some chefs will rather use the tiniest pinch of baking soda to baked foods with the aim of counteracting the slight acidity of the honey which may lead to over browning.

Because honey has the ability to absorb and retain moisture, it is often used to keep baked foods looking and tasting moist and fresh.

If you want to make baked foods that need a longer than usual shelf life, using honey in place of sugar is a great way to achieve freshness for as long time. If you plan on exporting or mailing any baked foods, then use honey.

For cosmetic use, honey is also a very good ingredients. Honey has an emulsifying quality that makes it a great emulsifier and a wonderful ingredient for soaps and body lotions.
