  • 3/4 c. of salsa Verde
  • 4 burrito-size flour tortillas
  • 1/2 c. of reduced-fat sour cream

How to Prepare:

  1. First, you will need to preheat the toaster oven to 425 degrees Fahrenheit.
  2. After that, you will need to slice the onions into thin pieces and then reserve two tablespoons of the green tops for garnish.
  3. Divide the chicken, jalapeno, cheese, and cilantro as well the remaining green onion evenly each side of the tortillas and then fold over the other half.
  4. Put the quesadillas in one later on a toaster oven tray that is lined with foil and then toast for eight to ten minutes.   4. Put the diced mozzarella, diced tomatoes and basil a small bowl and then drizzle with extra virgin olive oil. Season the mixture with pepper and salt and then stir to combine.
  5. Spoon the tomato mixture over the bruschetta. You can also serve it on the side as a dip.
