Ingredients

  • 1 full cup of shredded carrot (200g)
  • 1/2 cup apple sauce (130g)
  • 1/3 cup oil (60g)
  • 2 tablespoon apple cider vinegar (10g)
  • 2 tablespoon vanilla extract
  • 1/2 cups flour (180g)
  • 1/2 tablespoon baking soda
  • 3/4 tablespoon salt
  • 1 tablespoon cinnamon
  • 1/2 cup sugar (65g)
  • Shredded coconut and chopped walnuts
  • Optional 1/2 cup raisins (80g)

Instructions

Preheat oven to 177 celsius, and line an 8-inch round pan with parchment. In a mixing bowl, stir together the first 5 ingredients and let it rest for 10 minutes. In a separate bowl, stir together all other ingredients.

Pour wet content into dry, then stir until they just combined. Do not overmix it. Pour into the preparation pan, and smooth down evenly. Bake for 30 minutes. Pro tip – The carrot cake tastes much sweeter and good textured the day after it’s made.
