A Healthy Carrot Cake Recipe for Every Celebration

If you have not heard it before, Carrot cake is a cake that contains carrots mixed into batter. It is a very earthy embedded with naturally sweet flavors of carrots and mixed with warm cinnamon and cloves that makes it really delicious and comforting.

Being so delicious, as an adult you need to think twice before having a carrot cake. Reason being, sugar. As a kid, we were never conscious about gaining weight due to calories but now it becomes a serious concern for many of us.

Carrot cake is usually not that common among bakeries in cities. People generally like to bake them at home so it varies a lot. So, if like other people you are also one of them looking to bake it for the first time in home then you can compare your final product with a carrot cake bought from the market.

Many common carrot cake recipes contains around half to full cup of butter or oil to make them moist. Problem with this is that we don’t generally do that exhausting exercise in a day to burn off those calories.

That is why, instead of going with the traditional approach of using butter or oil to make this cake, our recipe of will use a very healthy ingredient used in baking: Greek yogurt. Best benefit of Greek yogurt is that it provides the same moisture and extra butter for half of the calories, and it also adds lot of protein in baked goods. Nothing can be more better than that.

After baking the cake, once it has cooled, it’s now time for cream cheese frosting. Trust me, you just can’t have carrot cake without it! If you want to compensate it with anything else, it is not going to work. This is the only real combination that gives it immense pleasuring taste.

  • 1 full cup of shredded carrot (200g)
  • 1/2 cup apple sauce (130g)
  • 1/3 cup oil (60g)
  • 2 tablespoon apple cider vinegar (10g)
  • 2 tablespoon vanilla extract
  • 1/2 cups flour (180g)
  • 1/2 tablespoon baking soda
  • 3/4 tablespoon salt
  • 1 tablespoon cinnamon
  • 1/2 cup sugar (65g)
  • Shredded coconut and chopped walnuts
  • Optional 1/2 cup raisins (80g)


Preheat oven to 177 celsius, and line an 8-inch round pan with parchment. In a mixing bowl, stir together the first 5 ingredients and let it rest for 10 minutes. In a separate bowl, stir together all other ingredients.

Pour wet content into dry, then stir until they just combined. Do not overmix it. Pour into the preparation pan, and smooth down evenly. Bake for 30 minutes. Pro tip – The carrot cake tastes much sweeter and good textured the day after it’s made.
